Ancient Soft Wheat Flour (Funo Variety) Stone Ground (1 Kg.)
Its selection dates back to the 30-40s and was selected by the geneticist Nazzareno Strampelli who also selected the variety of durum wheat "Senatore Cappelli". The "Funo" variety, in addition to having 40% less gluten than the varieties in use today, offers superior digestibility thanks to the simpler molecular composition of the gluten itself. Its cultivation does not require the use of herbicides as its rapid growth suffocates the weeds that may arise, but for this reason it offers low yields as it cannot sustain high fertilizations.
