We have been making pasta for generations in the same way: selected grains, dosage of groats, bronze drawing, slow drying at low temperature in a time ranging from 24 to 120 hours, according to the shapes. This is a way to preserve the biological value and taste of our fine durum wheat.
Our pasta should be cookes in boiling water (at least one liter for 3,5 oz pasta) when it is boiling add salt to taste and put the pasta in. When it is "al dente" drain and season at will.
