Stone Ground Pea Flour
From the nutritional point of view peas are classified as legumes. They contain starch, protein of medium biological value, a lot of fibre, and a fair amount of minerals and vitamins. They also contain antioxidants and other useful elements. Being a legume the pea contains no gluten. Pea flour is much used by vegans and features in a great many vegan recipes.
