Chickpea Flour Stone Ground
Like all legumes, chickpeas are rich in protein, fibre and mineral salts (in this case calcium, iron, magnesium, phosphorous, potassium and sodium). Unlike other legumes, however, chickpeas are more calorific, with around 6% fat content compared to the 1-2% fat content of peas, lentils and beans. Chickpeas also contain quantities of linoleic acids, which are believed to help regulate the metabolism and cholesterol.
Chickpea flour is perfect for preparing thick soups, chickpea pancakes, fritters without eggs and filled pancakes.
