Stone Ground Buckwheat Flour
Buckwheat, also called black wheat, is a pseudocereal with special nutritional characteristics, in that it contains the highest amount of protein per gram of all plant foods. Lysine, essential aminoacid, is present in buckwheat in high levels, and it's rich in fibre and mineral salts (ferro, phosphorous, copper, zinc, selenium and potassium). Buckwheat also contains no gluten.
Flour obtained from it is ideal for preparing fresh pasta, bread, pancakes, deep-fried pastries, biscuits, oven goods and pastries in general.
