Xanthan Gum (E415)

Xanthan gum is a polysaccharide created from the fermentation of a carbohydrate with natural Xanthomonas campestris bacteria strains. It is used as a thickener and stabiliser, and is particularly suitable for gluten-free doughs of various food products as it helps to give consistency. Gluten-free flours don't knead very well because the gum that binds them is missing: gluten. This is why, if you knead gluten-free flour, you may often find yourself with a crumbly and hard mixture, very difficult to work even if you have used the quantity of water given by the recommended recipes: xanthan acts on the dough, making it soft, uniform and workable. It is a powdered natural gum, very little is used because its purpose is only to make the dough soft and workable: in general, only 1-2 grams of Xanthan is required per 100 grams of gluten-free flour of any type (larger quantities would make the dough too hard and therefore unusable). It is generally used in "hard" doughs like pizza, bread and dried pasta because it helps a lot to compact the dough and make the bases nice and stable. In desserts, it is used especially in leavened products that become softer and more cohesive thanks to its 'gluing' power.
