Extra-virgin olive oil from the Converso olive press is made using only perfect olives, harvested at just the right moment of maturity and pressed using a cold extraction system within 24 hours of picking. The result is a high-quality extra-virgin olive oil with a rich, harmonious, flavour reminiscent of freshly-cut grass and with an essentially sweet taste. It also has slightly hot, bitter notes.
